Using a vegetable peeler or mandolin, slice the carrots and cucumber length-wise into ribbons. One ribbon of each per appetizer.
Add the carrots ribbon to boiling, salted water and cook for 2- 4 minutes to soften so they can be threaded onto a large toothpick or skewer, but still firm. Refresh in cold water and drain.
Thread one of each: cucumber, cherry tomato, red gem bocconcini and carrot onto a large toothpick or skewer. Drizzle the Tanimura & Antle Artisan® Lettuce with your favorite homemade or store bought salad dressing such as Thousand Island, Ranch, Caesar, etc. Enjoy!
