Tanimura & Antle Artisan® Lettuce
Holiday Salad Skewer Appetizer

Ingredients:

1 clamshell of Tanimura & Antle Artisan® Lettuce
2 Persian cucumber or 1 English cucumber (cut in half or thirds if very long)
1 package of marinated bocconcini mozzarella balls, drained
1 package of cherry tomatoes
2 whole carrots

Preparation:

For this appetizer we used the Tanimura & Antle Artisan® Red Gem Lettuce. Try each variety for a different look and flavor! Remove outer leaves of your lettuce head of choice, cut in half, rinse in lukewarm water then pat to dry and set aside.

Using a vegetable peeler or mandolin, slice the carrots and cucumber length-wise into ribbons. One ribbon of each per appetizer.

Add the carrots ribbon to boiling, salted water and cook for 2- 4 minutes to soften so they can be threaded onto a large toothpick or skewer, but still firm. Refresh in cold water and drain.

Thread one of each: cucumber, cherry tomato, red gem bocconcini and carrot onto a large toothpick or skewer. Drizzle the Tanimura & Antle Artisan® Lettuce with your favorite homemade or store bought salad dressing such as Thousand Island, Ranch, Caesar, etc. Enjoy!

Pomegranate Fig Goat Cheese Salad
with Balsamic Honey Dressing

Dressing:

3 tablespoons balsamic vinegar
2 tablespoons olive oil
1 tablespoon honey
Pinch of salt and pepper

3-4 cups Tanimura & Antle Artisan® Lettuce, cut, rinsed and patted dry.

Toppings:

½ cup pomegranate seeds
¼ cup crumbled goat cheese
¼ cup slivered almonds
2 orange tomatoes, sliced
¼ cup pepitas

Whisk dressing ingredients together. Toss lettuce with dressing and toppings. Serve immediately. If preparing ahead of time, do not add dressing to salad until serving time.

Fall Harvest Salad with Caramelized Red Onions
and Honey Poppy Seed Vinaigrette

1 teaspoon poppy seeds
Pinch of salt and pepper

½ cup caramelized red onions
½ cup diced roasted acorn squash
4-6 figs, cut in half
1 pear, thinly sliced
¼ cup sliced almonds
¼ cup feta cheese

Jicama Cranberry Waldorf Salad

Dressing:

½ cup whole milk yogurt
2 tablespoons apple cider vinegar
Salt and pepper

1 ½ cups diced jicama
1 ½ cups diced apple
¼ cup dried sweetened cranberries
¼ cup chopped walnuts
1 cup Tanimura & Antle Artisan® Lettuce salad greens - rinsed, patted dry and chopped

Tanimura & Antle Artisan® lettuce (whole) leaves, to serve on

Whisk dressing ingredients together. Toss dressing with jicama, apple, cranberries, walnuts and salad greens. Serve immediately on top of a bed of Artisan lettuce leaves.
